I kinda agree with the annoying nerd but here is a counterpoint, being immersed into a film is fun and 2015's the minions is not fun. I have seen the movie and I don't think being bored out of my mind is fun.

If the film fails at being fun for you then that's fine, for me it did not fail at that, goes to show you how subjective art really is
How do you do that shading style
Usually, I apply darker colors on a layer above one with lighter colors, then I use a tool of my choice set to erase on the dark layer on top, chipping away parts of the "shadow" layer where the light should be. The tool I used to erase in this particular instance was a basic airbrush spray tool in Clip Studio Paint.
You got any tips making backgrounds
well, im really, really, reeeally ineficient at it so im prob not the best one to ask. Got you 3:
-Practice perspective and form if you're not already, you dont gotta be super strict with it but knowing the rate at which things go smaller as they get farther from the camera will help you a lot.
- Proportions and scale relative to humans is important, specially when drawing houses and places meant for human use, a drawing can very easily look off if enough objects are mismatched, so have that in mind when looking at reference.
-Digital tools go a long way. I am admittedly p bad at this rn bc Sai is a really limited program, but whatever tools you use, use them at their fullest: copy-paste repeating elements, use the warp tool to match textures to perspective, 3d programs too; i am forcing myself rn to learn a little bit of blender for the next piece so i can have the perspective fit. Whatever helps you get a good result you should try it (unless its like tracing someone elses work or something like that).
